Recipe Description

These vegan Boxty pancakes offer a delightful and hearty start to your day or can be a wonderful side dish. Made with a mix of grated and mashed potatoes and cooked to golden perfection, they’re sure to impress.

Ingredients

  • 2 cups grated raw potato
  • 1 cup mashed potato
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/4 cups almond milk or any plant-based milk
  • 2 tablespoons chives (optional for garnish)
  • Vegan butter for frying

Steps:

  1. Wrap grated potatoes in a clean cloth and squeeze to remove excess moisture.
  2. In a large bowl, mix together the squeezed grated potato, mashed potato, flour, baking powder, and salt.
  3. Gradually add almond milk to form a thick batter.
  4. Heat a non-stick skillet or frying pan over medium heat and melt a small amount of vegan butter to coat the pan.
  5. Spoon portions of the batter onto the hot pan, flattening them down to form pancakes.
