Recipe Description

This creamy and tangy vegan cashew cheese ball is the perfect appetizer for any gathering. Made with raw cashews and flavored with nutritional yeast and fresh herbs, it’s sure to be a hit at your next party.

Ingredients

  • 1 1/2 cups raw cashews, soaked for 4 hours or overnight
  • 3 tablespoons lemon juice
  • 2 tablespoons nutritional yeast
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 cup chopped chives
  • 1/4 cup chopped parsley
  • Crackers or sliced vegetables, for serving

Steps:

  1. Drain and rinse the soaked cashews.
  2. In a food processor, combine cashews, lemon juice, nutritional yeast, garlic, and salt. Process until smooth and creamy.
  3. Transfer the mixture to a bowl and fold in the chives and parsley.
  4. Place a piece of plastic wrap on the counter and spoon the cheese mixture onto it. Form the mixture into a ball by bringing the four corners of the plastic wrap together and twisting it tightly.
  5. Refrigerate for at least 2 hours to set.
