Ingredients
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 1 green chili, slit
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 tsp chili powder
- 1 tsp garam masala
- 400 grams canned tomatoes
- 2 cans chickpeas, drained and rinsed
- salt to taste
- fresh cilantro, chopped for garnish
Steps:
- Heat oil in a large skillet over medium heat.
- Add onions, garlic, ginger, and green chili. Cook until onions are golden brown.
- Stir in coriander, cumin, turmeric, chili powder, and garam masala. Cook for 1 minute or until fragrant.
- Add canned tomatoes and bring to a simmer. Cook for 10 minutes.
- Add chickpeas and salt. Cook for another 10 minutes, allowing the flavors to meld.
