Ingredients

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green chili, slit
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 400 grams canned tomatoes
  • 2 cans chickpeas, drained and rinsed
  • salt to taste
  • fresh cilantro, chopped for garnish

Steps:

  1. Heat oil in a large skillet over medium heat.
  2. Add onions, garlic, ginger, and green chili. Cook until onions are golden brown.
  3. Stir in coriander, cumin, turmeric, chili powder, and garam masala. Cook for 1 minute or until fragrant.
  4. Add canned tomatoes and bring to a simmer. Cook for 10 minutes.
  5. Add chickpeas and salt. Cook for another 10 minutes, allowing the flavors to meld.
