    Recipe Description

Vegan Harira is a delightful and comforting tomato-based Moroccan soup, richly flavored with chickpeas, lentils, and a blend of aromatic spices. Traditionally served during Ramadan to break the fast, this version maintains the essence of the classic dish while ensuring it’s entirely plant-based. Its preparation involves simmering ingredients to perfection, allowing the spices to infuse the broth with a depth of flavor that’s both warming and satisfying. This recipe is a testament to the versatility of vegan cuisine, offering a hearty and nutritious option that doesn’t compromise on taste or tradition. Perfect for any time of the year, it serves as an excellent introduction to Moroccan flavors, making it a must-try for anyone looking to explore international vegan dishes.

    Ingredients

    • 1 large onion, diced
    • 2 cloves garlic, minced
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 1/2 teaspoon ground black pepper
    • 1/4 teaspoon cayenne pepper
    • 1 can (14 oz) diced tomatoes
    • 6 cups vegetable broth

    Steps:

    1. 1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until soft and translucent.
    2. 2. Stir in turmeric, cinnamon, ginger, black pepper, and cayenne pepper, cooking for another minute until fragrant.
    3. 3. Add diced tomatoes and vegetable broth, bringing to a boil before adding lentils. Reduce heat and simmer for about 30 minutes.
    4. 4. Add chickpeas, cilantro, parsley, and lemon juice to the pot. Season with salt to taste, simmering for another 10 minutes.
    5. 5. Serve hot, garnished with extra herbs if desired.
