Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 cup dried lentils, rinsed
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon

Steps:

  1. 1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until soft and translucent.
  2. 2. Stir in turmeric, cinnamon, ginger, black pepper, and cayenne pepper, cooking for another minute until fragrant.
  3. 3. Add diced tomatoes and vegetable broth, bringing to a boil before adding lentils. Reduce heat and simmer for about 30 minutes.
  4. 4. Add chickpeas, cilantro, parsley, and lemon juice to the pot. Season with salt to taste, simmering for another 10 minutes.
