Crispy, golden pastry stuffed with a spicy and savory vegan filling. These vegan Jamaican Patties are the perfect combination of flaky and flavorful, transporting you straight to the islands with every bite.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup cold water
- 1 tsp turmeric for color
- 1 cup cooked and mashed butternut squash
- 1/2 cup frozen peas
- 1 finely chopped onion
- 2 cloves garlic, minced
- 1 tbsp Jamaican curry powder
- Salt and pepper to taste
- 1/2 cup vegetable shortening
Steps:
- Prepare the dough by mixing flour, turmeric, and a pinch of salt. Cut in the vegetable shortening, then slowly add cold water until a dough forms. Chill for 30 minutes.
- For the filling, sauté onions and garlic until translucent. Add curry powder, then the mashed butternary squash and peas. Cook until heated through.
- Divide the dough into 12 portions. Roll each into a circle, add filling, then fold and seal the edges.
- Bake at 375°F (190°C) for 25-30 minutes, or until golden and crispy.
