Crispy on the outside, tender on the inside, these vegan potato pancakes are a delightful twist on a traditional Polish favorite.
Ingredients
- 4 large potatoes, peeled and grated
- 1 large onion, grated
- 2 cloves garlic, minced
- 1/2 cup flour (or gluten-free alternative)
- 1/2 cup unsweetened plant-based milk
- 1 tsp baking powder
- Salt and pepper to taste
- Vegetable oil for frying
Steps:
- Squeeze excess moisture out of the grated potatoes and onion using a clean kitchen towel.
- In a large bowl, combine the grated potatoes and onion, garlic, flour, plant-based milk, baking powder, salt, and pepper. Mix until well combined.
- Heat vegetable oil in a large skillet over medium heat. When hot, scoop the potato mixture to form pancakes, flattening them with a spatula.
- Cook each pancake for about 3-4 minutes on each side or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
