Crispy on the outside, tender on the inside, these vegan potato pancakes are a delightful twist on a traditional Polish favorite.

Ingredients

  • 4 large potatoes, peeled and grated
  • 1 large onion, grated
  • 2 cloves garlic, minced
  • 1/2 cup flour (or gluten-free alternative)
  • 1/2 cup unsweetened plant-based milk
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Steps:

  1. Squeeze excess moisture out of the grated potatoes and onion using a clean kitchen towel.
  2. In a large bowl, combine the grated potatoes and onion, garlic, flour, plant-based milk, baking powder, salt, and pepper. Mix until well combined.
  3. Heat vegetable oil in a large skillet over medium heat. When hot, scoop the potato mixture to form pancakes, flattening them with a spatula.
  4. Cook each pancake for about 3-4 minutes on each side or until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to drain excess oil.
