Ingredients
- 3 large potatoes, peeled and diced
- 1 small head of cabbage, shredded
- 2 leeks, cleaned and sliced
- 1 cup vegan cheese, grated
- 3 tablespoons olive oil
- Salt and pepper to taste
Steps:
- Boil potatoes until tender, about 15 minutes, then drain and mash.
