Recipe Description

Vegan Rumbledethumps is a delicious, hearty Scottish dish that’s perfect for chilly evenings. This twist on the traditional recipe substitutes dairy for plant-based alternatives, ensuring it remains rich in flavor with a creamy texture. Combining mashed potatoes, sautéed cabbage, and leeks, all crisped up under a succulent layer of vegan cheese, this dish is both comforting and filling. It’s the ideal choice for a festive winter meal or a cozy New Year’s dinner.

Ingredients

  • 3 large potatoes, peeled and diced
  • 1 small head of cabbage, shredded
  • 2 leeks, cleaned and sliced
  • 1 cup vegan cheese, grated
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Steps:

  1. Boil potatoes until tender, about 15 minutes, then drain and mash.
  2. In a pan, heat olive oil and sauté leeks and cabbage until soft, about 10 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a baking dish, combine mashed potatoes, sautéed leeks, and cabbage. Season with salt and pepper.
  5. Top with grated vegan cheese and bake in the oven for 20 minutes or until the top is golden and crispy.
