Recipe Description
Crispy on the outside, tender and flavorful on the inside, these vegan shrimp croquettes are a crowd-pleaser made with plant-based ingredients.
Ingredients
- 1 cup textured vegetable protein (TVP), shrimp-flavored
- 2 cups vegetable broth
- 1 cup breadcrumbs
- 1/2 cup flour
- 2 tablespoons nutritional yeast
- 1 teaspoon kelp powder
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- Oil for frying
Steps:
- Rehydrate the TVP in vegetable broth until soft, then drain any excess liquid.
- In a bowl, combine the hydrated TVP, breadcrumbs, flour, nutritional yeast, kelp powder, garlic, lemon juice, salt, and pepper. Mix well.
- Form the mixture into small, oblong shapes resembling croquettes.
- Heat oil in a frying pan over medium heat. Fry the croquettes until golden brown on all sides.
- Serve hot with your favorite vegan dipping sauce.
