Recipe Description

Crispy on the outside, tender and flavorful on the inside, these vegan shrimp croquettes are a crowd-pleaser made with plant-based ingredients.

Ingredients

  • 1 cup textured vegetable protein (TVP), shrimp-flavored
  • 2 cups vegetable broth
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 2 tablespoons nutritional yeast
  • 1 teaspoon kelp powder
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • Oil for frying

Steps:

  1. Rehydrate the TVP in vegetable broth until soft, then drain any excess liquid.
  2. In a bowl, combine the hydrated TVP, breadcrumbs, flour, nutritional yeast, kelp powder, garlic, lemon juice, salt, and pepper. Mix well.
  3. Form the mixture into small, oblong shapes resembling croquettes.
  4. Heat oil in a frying pan over medium heat. Fry the croquettes until golden brown on all sides.
  5. Serve hot with your favorite vegan dipping sauce.
