    Vegan Speculoos Cookies

    Recipe Description

    Crispy, caramelized, and with a hint of spices, these Vegan Speculoos Cookies are perfect for holiday baking. Made with simple ingredients, they’re a delightful treat that brings warmth and joy to any festive table.

    Ingredients

    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 1/2 cup vegan butter, softened
    • 1 cup brown sugar
    • 1/4 cup unsweetened applesauce
    • 1 teaspoon vanilla extract

    Steps:

    1. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves.
    2. In a large bowl, cream together the vegan butter and brown sugar until light and fluffy.
    3. Add the applesauce and vanilla extract to the butter mixture and mix well.
    4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
    5. Wrap the dough in plastic and chill in the refrigerator for at least 1 hour.
    6. Roll out the dough on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to cut into desired shapes.
    7. Place cookies on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden around the edges.
    8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
