Ingredients

  • 8 oz rice noodles
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 cup mushrooms, sliced
  • 1 lime, juiced
  • Fresh cilantro for garnish
  • Green onions, sliced for garnish

Steps:

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger. Sauté for 3-4 minutes until onion is translucent.
  3. Add the carrots and bell pepper, sautéing for another 5 minutes.
  4. Pour in the vegetable broth, coconut milk, soy sauce, and sriracha. Bring to a simmer.
  5. Add the mushrooms and simmer for 10 minutes.
  6. Serve hot, garnished with cilantro and green onions.
