Ingredients
- 8 oz rice noodles
- 1 tbsp vegetable oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 4 cups vegetable broth
- 1 can coconut milk
- 2 tbsp soy sauce
- 1 tbsp sriracha
- 1 cup mushrooms, sliced
- 1 lime, juiced
- Fresh cilantro for garnish
- Green onions, sliced for garnish
Steps:
- Cook the rice noodles according to package instructions, then drain and set aside.
- Heat the oil in a large pot over medium heat. Add the onion, garlic, and ginger. Sauté for 3-4 minutes until onion is translucent.
- Add the carrots and bell pepper, sautéing for another 5 minutes.
- Pour in the vegetable broth, coconut milk, soy sauce, and sriracha. Bring to a simmer.
- Add the mushrooms and simmer for 10 minutes.
- Serve hot, garnished with cilantro and green onions.
