Made from a savory blend of tofu, vital wheat gluten, and chickpea flour, it’s seasoned with poultry seasoning, sage, and thyme to mimic the classic turkey flavors. The “turkey” is then baked to perfection and can be served with your favorite vegan gravy and side dishes. This recipe is a wonderful way to celebrate the holidays, offering a compassionate and healthful alternative that doesn’t compromise on taste or presentation.
Ingredients
- 1 cup vital wheat gluten
- 1/2 cup chickpea flour
- 1/4 cup nutritional yeast
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- 1 1/2 cups vegetable broth
- 2 teaspoons poultry seasoning
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
Steps:
- Preheat the oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
- Create the “turkey” dough. In a food processor, combine the tofu, vital wheat gluten, chickpea flour, nutritional yeast, olive oil, soy sauce, 1/2 cup of vegetable broth, poultry seasoning, sage, thyme, salt, and pepper. Process until the mixture forms a smooth, elastic dough.
- Shape the “turkey”. Transfer the dough to a clean surface and knead it for a few minutes. Shape the dough into a loaf or a “turkey”-like shape, as desired.
- Prepare for baking. Place the shaped dough on the prepared baking sheet. If desired, you can wrap it in cheesecloth and tie it with kitchen twine to help hold its shape during baking.
- Bake. Mix the remaining 1 cup of vegetable broth with a bit more olive oil or melted vegan butter. Baste the “turkey” with this mixture, then cover loosely with foil. Bake for 1 hour, basting every 20 minutes with the broth mixture to keep it moist.
- Brown the “turkey”. After 1 hour, remove the foil and increase the oven temperature to 400°F (200°C). Bake for an additional 20-30 minutes, or until the outside is golden and slightly crispy.
- Rest and serve. Let the vegan “turkey” rest for 10 minutes before slicing. Serve with your favorite vegan gravy and holiday side dishes.
