Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons organic sugar or maple syrup
- 1/2 teaspoon salt
- 1 3/4 cups plant-based milk (almond, soy, oat, etc.)
- 1/3 cup melted coconut oil or any neutral oil
- 1 teaspoon vanilla extract
Steps:
- Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with a little oil to prevent sticking.
- Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- Combine the wet ingredients. In another bowl, mix the plant-based milk, melted oil, and vanilla extract.
- Make the batter. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Cook the waffles. Pour enough batter onto the waffle iron to just cover the waffle grid. Close the lid and cook according to the manufacturer’s instructions, usually for about 5 minutes, until the waffle is golden and crispy.
- Serve immediately. Remove the waffle carefully and serve hot with your choice of toppings like fresh fruits, maple syrup, vegan whipped cream, or nut butter.
