    These vegan waffles are the perfect way to start your day or enjoy a leisurely weekend brunch. Crispy on the outside and fluffy on the inside, they are delightful when topped with fresh fruits, a drizzle of maple syrup, or a dollop of your favorite vegan whipped cream. Made with simple plant-based ingredients, these waffles are not only delicious but also a healthier alternative to traditional waffle recipes. Whether you’re vegan or simply looking to incorporate more plant-based meals into your diet, these waffles are sure to impress.

    Ingredients

    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 2 tablespoons organic sugar or maple syrup
    • 1/2 teaspoon salt
    • 1 3/4 cups plant-based milk (almond, soy, oat, etc.)
    • 1/3 cup melted coconut oil or any neutral oil
    • 1 teaspoon vanilla extract

    Steps:

    1. Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with a little oil to prevent sticking.
    2. Mix the dry ingredients. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
    3. Combine the wet ingredients. In another bowl, mix the plant-based milk, melted oil, and vanilla extract.
    4. Make the batter. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
    5. Cook the waffles. Pour enough batter onto the waffle iron to just cover the waffle grid. Close the lid and cook according to the manufacturer’s instructions, usually for about 5 minutes, until the waffle is golden and crispy.
    6. Serve immediately. Remove the waffle carefully and serve hot with your choice of toppings like fresh fruits, maple syrup, vegan whipped cream, or nut butter.
