Ingredients

  • 2 cups zucchini, grated
  • 1/4 cup onion, finely chopped
  • 1/2 cup flour
  • 1/4 cup nutritional yeast
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Olive oil for frying

Steps:

  1. Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
  2. In a bowl, mix zucchini, onion, flour, nutritional yeast, baking powder, salt, and pepper until well combined.
  3. Heat oil in a pan over medium heat.
  4. Form the mixture into patties and fry until golden brown on both sides, about 5 minutes per side.
  5. Drain on paper towels and serve hot.
