- 2 cups zucchini, grated
- 1/4 cup onion, finely chopped
- 1/2 cup flour
- 1/4 cup nutritional yeast
- 1 teaspoon baking powder
- Salt and pepper to taste
- Olive oil for frying
Steps:
- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
- In a bowl, mix zucchini, onion, flour, nutritional yeast, baking powder, salt, and pepper until well combined.
- Heat oil in a pan over medium heat.
- Form the mixture into patties and fry until golden brown on both sides, about 5 minutes per side.
- Drain on paper towels and serve hot.
