    Vegetable Jalfrezi is a vibrant and flavorful stir-fry dish originating from Indian cuisine. This colorful medley of fresh vegetables and aromatic spices is cooked in a tangy tomato-based sauce, offering a delightful blend of textures and tastes. It’s a perfect dish for those seeking a hearty yet healthy meal that can spice up any dinner table.

    Ingredients

    • 1 large onion, sliced
    • 2 cloves garlic, minced
    • 1 inch ginger, minced
    • 1 green chili, sliced (optional)
    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 carrot, julienned
    • 100g green beans, chopped
    • 1 small cauliflower, cut into florets

    Steps:

    1. Heat oil in a large pan over medium heat.
    2. Add onions, garlic, ginger, and green chili. Sauté until onions are soft.
    3. Add bell peppers, carrots, green beans, and cauliflower. Stir-fry for 5-7 minutes.
    4. Stir in chopped tomatoes, cumin, coriander, turmeric, and garam masala. Cook until vegetables are tender.
    5. Season with salt. Garnish with fresh cilantro before serving.
