Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1 large carrot, julienned
- 1 bell pepper, thinly sliced
- 1 cup broccoli florets
- 200g firm tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 teaspoon grated ginger
- 2 green onions, chopped
- 1 teaspoon sesame seeds
- 1 tablespoon vegetable oil
Steps:
- Rinse the sushi rice under cold water until the water runs clear.
- Cook rice with water according to package instructions.
- In a pan, heat vegetable oil over medium heat. Add tofu and fry until golden brown. Set aside.
- In the same pan, add a bit more oil if needed, and saute carrots, bell peppers, and broccoli until just tender.
- Whisk together soy sauce, mirin, and grated ginger in a small bowl.
- Serve the vegetable and tofu mixture over the cooked rice, garnished with green onions and sesame seeds.
