Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 large carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 200g firm tofu, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon grated ginger
  • 2 green onions, chopped
  • 1 teaspoon sesame seeds
  • 1 tablespoon vegetable oil

Steps:

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook rice with water according to package instructions.
  3. In a pan, heat vegetable oil over medium heat. Add tofu and fry until golden brown. Set aside.
  4. In the same pan, add a bit more oil if needed, and saute carrots, bell peppers, and broccoli until just tender.
  5. Whisk together soy sauce, mirin, and grated ginger in a small bowl.
