Ingredients

  • 3 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 8 corn tortillas
  • 1 avocado, sliced
  • 1 cup red cabbage, shredded
  • 1 carrot, shredded
  • 2 tbsp lime juice
