Ingredients
- 3 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 8 corn tortillas
- 1 avocado, sliced
- 1 cup red cabbage, shredded
- 1 carrot, shredded
- 2 tbsp lime juice
- 1 tbsp cilantro, chopped
