    Indulge in the rich, aromatic flavors of these easy curry noodles, packed with a vibrant mix of veggies. A perfect blend of spices, coconut milk, and tender noodles make this dish a comforting and satisfying meal, ideal for any day of the week.

    Ingredients

    • 8 oz noodles (rice or wheat)
    • 1 tablespoon coconut oil
    • 2 cloves garlic, minced
    • 1 bell pepper, sliced
    • 1 carrot, julienned
    • 2 cups spinach
    • 1 can coconut milk
    • 2 tablespoons curry powder
    • 1 tablespoon soy sauce
    • 1 teaspoon sugar
    • Salt to taste
    • Lime wedges, for serving

    Steps:

    1. Cook noodles according to package instructions, drain, and set aside.
    2. In a large bowl, combine cucumber, carrot, bell pepper, and green onions.
    3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, and ginger.
