Ingredients

  • 1 cup cauliflower florets
  • 1 cup canned black beans, rinsed and drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/4 cup vegan cheese, shredded
  • Salsa and guacamole, for serving

Steps:

  1. In a bowl, combine cauliflower, black beans, chili powder, cumin, salt, and pepper.
  2. Microwave tortillas for 30 seconds to make them pliable.
  3. Place about 2 tablespoons of the filling on each tortilla, sprinkle with vegan cheese, and roll tightly.
  4. Place taquitos seam side down in the air-fryer basket.
  5. Air-fry at 400°F for 8-10 minutes until crispy.
