These vegan air-fryer taquitos are filled with a flavorful mix of cauliflower and black beans, making them a perfect snack for game night or a festive New Year’s appetizer. Crispy on the outside and tender on the inside, they’re a crowd-pleaser for all ages.
Ingredients
- 1 cup cauliflower florets
- 1 cup canned black beans, rinsed and drained
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 1/4 cup vegan cheese, shredded
- Salsa and guacamole, for serving
Steps:
- In a bowl, combine cauliflower, black beans, chili powder, cumin, salt, and pepper.
- Microwave tortillas for 30 seconds to make them pliable.
- Place about 2 tablespoons of the filling on each tortilla, sprinkle with vegan cheese, and roll tightly.
- Place taquitos seam side down in the air-fryer basket.
- Air-fry at 400°F for 8-10 minutes until crispy.
