Ingredients
- 3 tablespoons olive oil
- Salt and freshly ground black pepper to taste

Steps:
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Prepare the Brussels sprouts by washing them, trimming the ends, and cutting them in half. This helps them cook evenly and get nice and crispy.
- Toss the sprouts. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until they are well coated. Spread them out on the prepared baking sheet in a single layer, cut sides down.
- Roast the Brussels sprouts in the preheated oven for about 20-25 minutes, or until they are tender on the inside and crispy on the edges. Halfway through, give the pan a shake or use a spatula to turn the sprouts for even browning.
- Glaze the sprouts. In the last 5 minutes of roasting, drizzle the balsamic vinegar and maple syrup over the Brussels sprouts, then return them to the oven to finish caramelizing.
- Serve. Once done, transfer the Brussels sprouts to a serving dish. If desired, garnish with pomegranate seeds or crushed walnuts for an extra burst of flavor and texture.
