    Recipe Description

    Transform hearty mushrooms into a mouthwatering, vegan rendition of pulled pork sandwiches. Packed with flavor, these sandwiches offer a satisfying and wholesome alternative, ideal for any BBQ or game night.

    Ingredients

    • 1 tablespoon olive oil
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon soy sauce
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon ground black pepper
    • 1 cup vegan BBQ sauce
    • 4 whole wheat sandwich buns

    Steps:

    1. Heat olive oil in a pan over medium heat.
    2. Add onion and garlic, cook until softened.
    3. Add shredded mushrooms, soy sauce, smoked paprika, and black pepper. Cook for about 10 minutes, until mushrooms are soft.
    4. Stir in BBQ sauce and reduce the heat to low. Simmer for 20 minutes, or until the mixture has thickened.
    5. Serve hot on whole wheat buns.
