Ingredients

  • 4 large tortillas
  • 2 potatoes (diced)
  • 1 cup cauliflower florets
  • 1/2 cup peas
  • 1 onion (diced)
  • 2 tomatoes (diced)
  • 2 garlic cloves (minced)
  • 1 inch ginger (minced)
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh Cilantro for garnish

Steps:

  1. Lemon Wedges for serving
  2. Heat oil in a pan, add cumin seeds until they splutter
  3. Add onion, garlic, and ginger, cook until onions are translucent
  4. Add potatoes and cauliflower, cooking until half done
  5. Stir in peas, tomatoes and all the spices, cooking until the vegetables are tender
  6. Warm tortillas according to the package instructions
  7. Divide the vegetable mixture amou8nt the tortillas, roll up tightly
  8. Garnish with cilantro and serve with lemon wedges
  9. Serve
