Ingredients
- 4 large tortillas
- 2 potatoes (diced)
- 1 cup cauliflower florets
- 1/2 cup peas
- 1 onion (diced)
- 2 tomatoes (diced)
- 2 garlic cloves (minced)
- 1 inch ginger (minced)
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp coriander powder
- Salt to taste
- 2 tbsp oil
- Fresh Cilantro for garnish
Steps:
- Lemon Wedges for serving
- Heat oil in a pan, add cumin seeds until they splutter
- Add onion, garlic, and ginger, cook until onions are translucent
- Add potatoes and cauliflower, cooking until half done
- Stir in peas, tomatoes and all the spices, cooking until the vegetables are tender
- Warm tortillas according to the package instructions
- Divide the vegetable mixture amou8nt the tortillas, roll up tightly
- Garnish with cilantro and serve with lemon wedges
- Serve
