Ingredients
- 2 pounds potatoes, peeled and quartered
- 1/2 cup unsweetened almond milk
- 1/4 cup vegan butter
- 1 bunch green onions, chopped
- Salt and pepper to taste
Steps:
- Boil the potatoes in salted water until tender, about 20 minutes. Drain and mash with almond milk and vegan butter until smooth.
- Stir in the green onions and season with salt and pepper to taste.
- Serve warm with an extra dollop of vegan butter on top, if desired.
