    Champ (Irish Mashed Potatoes)

    Recipe Description

    A traditional Irish dish of creamy mashed potatoes blended with spring onions for a simple yet satisfying side. Often served with a pat of vegan butter melting in the center.

    Ingredients

    • 2 pounds potatoes, peeled and quartered
    • 1/2 cup unsweetened almond milk
    • 1/4 cup vegan butter
    • 1 bunch green onions, chopped
    • Salt and pepper to taste

    Steps:

    1. Boil the potatoes in salted water until tender, about 20 minutes. Drain and mash with almond milk and vegan butter until smooth.
    2. Stir in the green onions and season with salt and pepper to taste.
    3. Serve warm with an extra dollop of vegan butter on top, if desired.
