Ingredients
- 2 20-ounce cans young green jackfruit in water, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 cup vegan barbecue sauce
- 4 vegan hamburger buns, toasted
- 1 cup cabbage slaw
- Salt and pepper to taste
Steps:
- Rinse and drain the jackfruit. Use your hands to shred the jackfruit into pieces that resemble pulled pork.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the shredded jackfruit to the skillet along with the smoked paprika, ground cumin, and cayenne pepper. Stir to combine and cook for another 5 minutes.
- Pour the barbecue sauce over the jackfruit mixture and reduce the heat to low. Cover and simmer for 20-25 minutes, until the jackfruit is tender and the flavors have melded.
- Season the BBQ jackfruit with salt and pepper to taste.
