  • 1 eggplant, thinly sliced
  • 1 red onion, thinly sliced
  • 1 bell pepper, sliced
  • 2 tomatoes, sliced
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
