Recipe Description
A traditional Greek dish featuring large white beans baked in a rich tomato sauce with herbs and olive oil. This comforting vegan meal is perfect for any family gathering or a wholesome weeknight dinner.
Ingredients
- 1 large onion, chopped
- 2 cloves garlic, minced
- 400g can chopped tomatoes
- 2 tablespoons tomato paste
- 1/4 cup olive oil
- 1 teaspoon oregano
- 2 bay leaves
- Salt and pepper to taste
- Parsley, for garnish
Steps:
- Soak the beans overnight in plenty of water.
- Drain and rinse the beans, then boil them in fresh water for 40 minutes until almost tender.
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
- Add the garlic, chopped tomatoes, tomato paste, oregano, bay leaves, salt, and pepper to the skillet, and cook for a few minutes.
- Cover with aluminum foil and bake for 1 hour.
- Remove the foil and bake for another 30 minutes until the top is slightly caramelized.
- Garnish with parsley before serving.
