Ingredients
- 1 kg ripe tomatoes, roughly chopped
- 1 cucumber, peeled and chopped
- 1 green pepper, chopped
- 1 small red onion, chopped
- 2 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper, to taste
- Ice water, as needed
- Fresh basil, for garnish

- 1. Combine tomatoes, cucumber, green pepper, red onion, and garlic in a large bowl.
- 2. Transfer the mixture to a blender and add olive oil, red wine vinegar, salt, and pepper.
- 3. Blend until smooth. If the soup is too thick, add a little ice water to reach desired consistency.
- 4. Chill in the refrigerator for at least 2 hours.
- 5. Serve cold, garnished with fresh basil.
