Ingredients
- 1 large cauliflower
- 2 tablespoons harissa paste
- 3 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 1 garlic clove, minced
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water as needed
- Fresh parsley for garnish
Steps:
- Preheat oven to 425°F (220°C).
- Remove the leaves and trim the base of the cauliflower, but keep the core intact.
- Slice the cauliflower into thick steaks, about 1 inch each.
- Mix harissa paste with 2 tablespoons of olive oil. Brush mixture over both sides of the cauliflower steaks.
- Season with salt and black pepper.
- Roast in the oven for 20-25 minutes, flipping halfway through, until tender and slightly charred.
- Meanwhile, prepare the garlic sauce by whisking together minced garlic, tahini, lemon juice, and remaining olive oil. Add water to thin to desired consistency.
- Season the sauce with salt to taste.
