Ingredients
- 1 cup plain flour
- 1 cup sugar
- 3/4 cup desiccated coconut
- 1/4 cup golden syrup
- 1/2 tsp baking soda
- 125g vegan butter
- 2 tbsp boiling water
Steps:
- Preheat oven to 180°C (350°F) and line two baking trays with baking paper.
- In a large bowl, combine the oats, flour, sugar, and coconut.
- Melt the vegan butter and golden syrup together in a small pot over low heat.
- Dissolve the baking soda in boiling water and add to the butter and syrup mixture.
- Pour the wet ingredients into the dry ingredients and mix well.
- Bake for 10-15 minutes or until golden brown.
- Allow to cool on the trays for 5 minutes, then transfer to a wire rack to cool completely.
