Free from dairy and eggs, they provide a wholesome and delightful snack perfect for any time of day. Whether paired with tea or enjoyed on their own, these biscuits are a timeless treat.

Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup sugar
  • 3/4 cup desiccated coconut
  • 1/4 cup golden syrup
  • 1/2 tsp baking soda
  • 125g vegan butter
  • 2 tbsp boiling water

Steps:

  1. Preheat oven to 180°C (350°F) and line two baking trays with baking paper.
  2. In a large bowl, combine the oats, flour, sugar, and coconut.
  3. Melt the vegan butter and golden syrup together in a small pot over low heat.
  4. Dissolve the baking soda in boiling water and add to the butter and syrup mixture.
  5. Pour the wet ingredients into the dry ingredients and mix well.
  6. Bake for 10-15 minutes or until golden brown.
  7. Allow to cool on the trays for 5 minutes, then transfer to a wire rack to cool completely.
