Recipe Description
A cozy and comforting classic German beer soup made vegan. Perfect for warming up during the colder months and bringing a touch of tradition to your table.
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 liter vegan-friendly beer
- 2 cups vegetable broth
- 1 tsp thyme
- 1 tsp sage
- Salt and pepper to taste
- 1 cup unsweetened almond milk
- 2 tbsp cornstarch mixed with 2 tbsp water
- Croutons, for serving
Steps:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft.
- Pour in the beer and vegetable broth, then add the thyme and sage. Season with salt and pepper. Bring to a simmer.
- Mix the almond milk and cornstarch mixture together then pour into the soup. Stir well until the soup thickens slightly.
- Serve hot with croutons on top.
