Recipe Description

A cozy and comforting classic German beer soup made vegan. Perfect for warming up during the colder months and bringing a touch of tradition to your table.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 liter vegan-friendly beer
  • 2 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp sage
  • Salt and pepper to taste
  • 1 cup unsweetened almond milk
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • Croutons, for serving

Steps:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until soft.
  2. Pour in the beer and vegetable broth, then add the thyme and sage. Season with salt and pepper. Bring to a simmer.
  3. Mix the almond milk and cornstarch mixture together then pour into the soup. Stir well until the soup thickens slightly.
  4. Serve hot with croutons on top.
