Recipe Description

Ingredients
- 1/2 cup coconut flour
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 can (400ml) full-fat coconut milk
- 1/2 cup coconut sugar
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 200g vegan dark chocolate
Steps:
- Preheat oven to 180°C (350°F). Line a square baking dish with parchment paper.
- Mix almond flour, coconut flour, melted coconut oil, and maple syrup in a bowl. Press the mixture into the bottom of the prepared dish.
- Bake for 10 minutes. Let cool while preparing the caramel.
- For the caramel, combine coconut milk and coconut sugar in a saucepan over medium heat. Stir until the sugar dissolves, then bring to a boil. Reduce heat to low, add almond butter, vanilla extract, and salt. Simmer for 20 minutes, stirring occasionally until thickened.
- Pour the caramel over the cooled base. Place in the refrigerator to chill for at least 2 hours, or until set.
- Refrigerate until the chocolate sets. Cut into squares and serve.
