Ingredients

  • 2 tablespoons light soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1/2 teaspoon red chili flakes
  • 2 cups extra-firm tofu, crumbled
  • 1/4 cup shallots, thinly sliced
  • 1/3 cup mint leaves, chopped
  • 1/3 cup cilantro, chopped
  • 2 tablespoons green onions, chopped
  • 1 tablespoon roasted rice powder
  • 1 teaspoon lemongrass, minced (optional)
  • Lettuce leaves for serving
  • Cucumber slices and lime wedges for garnish

Steps:

  1. In a bowl, whisk together soy sauce, lime juice, brown sugar, and chili flakes.
  2. Heat a non-stick skillet over medium heat, add the crumbled tofu, and cook until slightly browned.
  3. Toss the tofu in the sauce mixture and cook for an additional 2 minutes.
  4. Remove from heat and allow to cool slightly.
  5. In a large bowl, combine tofu, shallots, mint, cilantro, green onions, roasted rice powder, and lemongrass if using.
