Recipe Description

Savory vegan stuffed mushroom caps filled with a delicious mixture of spinach, vegan cream cheese, and breadcrumbs.

Ingredients

  • 12 large button mushrooms, stems removed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1/2 cup vegan cream cheese
  • 1/2 cup breadcrumbs
  • Salt to taste
  • Pepper to taste
  • Paprika for garnish

Steps:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté onion and garlic until tender.
  3. Add spinach and cook until wilted.
  4. Remove from heat and mix in vegan cream cheese and breadcrumbs. Season with salt and pepper.
  5. Stuff each mushroom cap with the mixture and arrange on a baking sheet.
  6. Bake for 20-25 minutes, or until mushrooms are tender.
  7. Serve hot.
