Ingredients
- 1 cup almond milk
- 2 tablespoons vegan butter
- 1 packet instant yeast
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 3 cups all-purpose flour
- 1/2 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup vegan butter, melted for filling
- 1 cup powdered sugar
- 2 tablespoons coconut cream
- 1/2 teaspoon vanilla extract
Steps:
- Warm almond milk and 2 tablespoons of vegan butter until lukewarm. Add yeast and 1 tablespoon of sugar, let sit for 10 minutes to activate.
- In a large bowl, combine flour and salt. Add yeast mixture and form into a dough. Knead for 5 minutes, then let rise in a warm place for 1 hour.
- Preheat oven to 350°F (175°C). Roll out dough on a floured surface into a rectangle. Spread with melted butter, then sprinkle evenly with brown sugar and cinnamon.
- Roll up the dough tightly and cut into 12 rolls. Place in a baking dish and let rise for another 30 minutes.
- Bake for 25 minutes or until golden brown. For the frosting, whisk together powdered sugar, coconut cream, and vanilla. Spread over warm rolls before serving.
