    This heartwarming Classic Vegan Goulash captures the essence of traditional Hungarian cuisine, tailored for a vegan diet. It features a rich blend of hearty vegetables and meat-free protein, simmered in a robust, spicy tomato sauce, perfect for cold weather comfort.

    Ingredients

    • 1 large onion, chopped
    • 3 cloves garlic, minced
    • 2 bell peppers, chopped
    • 2 cups vegan beef substitute, chunks
    • 1 can (14 oz) diced tomatoes
    • 3 tbsp paprika
    • 1 tsp caraway seeds
    • 2 cups vegetable broth
    • Salt and pepper to taste

    Steps:

    1. Heat oil in a large pot over medium heat.
    2. Add onion and garlic, sauté until translucent.
    3. Incorporate bell peppers and cook for 5 minutes.
    4. Stir in vegan beef chunks, and cook for an additional 5 minutes.
