    Ingredients

    • 1/4 cup vegetable oil
    • 1/4 cup all-purpose flour
    • 1 large onion, chopped
    • 1 bell pepper, chopped
    • 3 celery stalks, chopped
    • 4 cloves garlic, minced
    • 2 vegan sausages, sliced
    • 6 cups vegetable broth
    • 1 can diced tomatoes
    • 2 cups sliced okra
    • 2 bay leaves
    • 1 teaspoon thyme
    • 1/2 teaspoon cayenne pepper
    • 1 teaspoon smoked paprika
    • Salt and pepper to taste

    Steps:

    1. In a large pot, heat the vegetable oil over medium heat. Add the flour to make a roux, stirring constantly, until it reaches a dark brown color.
    2. Add the chopped onions, bell pepper, celery, and garlic to the roux. Cook until vegetables are soft.
    3. Add the sliced vegan sausages, vegetable broth, diced tomatoes, okra, bay leaves, thyme, cayenne pepper, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1 hour.
    4. Serve the gumbo hot over cooked rice.
