    Ingredients

    • 1 large onion, finely chopped
    • 2 celery stalks, finely chopped
    • 3 garlic cloves, minced
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground turmeric
    • 1/2 teaspoon ground ginger
    • 1 cup dried red lentils
    • 1 can (14 oz) chickpeas, drained
    • 1 can (14 oz) diced tomatoes

    Steps:

    1. Heat the olive oil in a large pot over medium-high heat. Add onion and celery, cooking until softened.
    2. Stir in garlic, cinnamon, turmeric, and ginger, cooking for another minute until fragrant.
    3. Add lentils, chickpeas, tomatoes, and vegetable broth. Bring to a boil, then simmer uncovered for 30 minutes.
    4. Stir in cilantro, parsley, and lemon juice. Season with salt and pepper. Serve hot.
