Ingredients
- 1 large onion, finely chopped
- 2 celery stalks, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1 cup dried red lentils
- 1 can (14 oz) chickpeas, drained
- 1 can (14 oz) diced tomatoes
Steps:
- Heat the olive oil in a large pot over medium-high heat. Add onion and celery, cooking until softened.
- Stir in garlic, cinnamon, turmeric, and ginger, cooking for another minute until fragrant.
- Add lentils, chickpeas, tomatoes, and vegetable broth. Bring to a boil, then simmer uncovered for 30 minutes.
- Stir in cilantro, parsley, and lemon juice. Season with salt and pepper. Serve hot.
