Ingredients

  • 10 large ears of corn, husked, kernels cut off
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1/2 cup vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 2 tablespoons cornmeal
  • Corn husks, for wrapping

Steps:

  1. In a food processor, pulse corn kernels until coarsely ground.
  2. In a large skillet, heat the vegetable oil over medium heat. Add onions and garlic, cooking until soft.
  3. Mix in the ground corn, salt, pepper, and cumin. Cook for 10 minutes.
