Ingredients
- 1 cup diced onions
- 2 cloves garlic, minced
- 1/2 cup vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 2 tablespoons cornmeal
- Corn husks, for wrapping
Steps:
- In a food processor, pulse corn kernels until coarsely ground.
- In a large skillet, heat the vegetable oil over medium heat. Add onions and garlic, cooking until soft.
- Mix in the ground corn, salt, pepper, and cumin. Cook for 10 minutes.
- Remove from heat and stir in cornmeal until well incorporated.
