Ingredients

  • 1 cup yellow cornmeal
  • 3/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup unsweetened almond milk
  • 1/4 cup applesauce
  • 1/4 cup diced onion

Steps:

  1. In a large bowl, mix together the dry ingredients.
  2. Stir in the almond milk and applesauce until the batter is smooth.
  3. Fold in the diced onions.
  4. Heat oil in a deep fryer or large pot to 365°F (185°C).
  5. Drop batter by rounded spoonfuls into the hot oil.
  6. Remove with a slotted spoon and drain on paper towels before serving.
