Ingredients
- 1 cup granulated sugar
- 1 cup non-dairy milk
- 1/3 cup vegetable oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups desiccated coconut
- For the chocolate glaze: 2 cups powdered sugar, sifted

- 2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- 3. In another bowl, mix the non-dairy milk, vegetable oil, apple cider vinegar, and vanilla.
- 4. Combine wet and dry ingredients until smooth.
- 5. Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
- 7. For the glaze, whisk together powdered sugar, cocoa powder, water, and vanilla in a bowl until smooth.
- 8. Dip each cake square into the chocolate glaze, ensuring all sides are covered, then roll in desiccated coconut.
- 9. Place on a wire rack to set before serving.
