    A beloved Canadian dessert, the Nanaimo Bar, gets a sumptuous vegan makeover that promises to delight with its irresistible three-layer structure. Beginning with a crumbly, nutty base followed by a smooth, creamy custard-flavored middle, and crowned by a glossy layer of rich, dark chocolate, this no-bake recipe offers a complexity of textures and flavors that is bound to satisfy any palate. Despite its luxurious appearance, it is surprisingly straightforward to prepare, requiring simple pantry staples, making it an excellent option for when you crave something sweet without much fuss. This dessert not only pays homage to its Canadian roots but also invites vegans and non-vegans alike to indulge in its delightful composition.

    Ingredients

    • 1/2 cup vegan butter, melted
    • 1/4 cup sugar
    • 5 tbsp cocoa powder
    • 1 1/2 cups vegan graham cracker crumbs
    • 1/2 cup finely chopped walnuts
    • 1 cup coconut flakes
    • 1/2 cup vegan butter, room temperature
    • 2 tbsp custard powder
    • 2 cups powdered sugar
    • 3-4 tbsp soy milk
    • 1/2 tsp vanilla extract
    • 4 oz vegan chocolate
    • 2 tbsp coconut oil

    Steps:

    1. Mix melted butter, sugar, and cocoa powder. Stir in graham cracker crumbs, walnuts, and coconut flakes. Press into the bottom of an 8×8 inch pan.
    2. Beat room temp butter, custard powder, powdered sugar, soy milk, and vanilla until light. Spread over the base layer.
    3. Melt chocolate with coconut oil and pour over the custard layer. Refrigerate until set, about 2 hours. Cut into bars and serve.
