Recipe Description

A delightful vegan take on the classic Indian street food, Pani Puri. Crunchy puris filled with spicy-tangy water and a savory filling.

Ingredients

  • 1 cup semolina
  • 1/4 cup warm water
  • 1 teaspoon salt
  • 1 cup boiled and mashed potatoes
  • 1/2 cup finely chopped onion
  • 1/2 cup boiled chickpeas
  • 1 teaspoon chaat masala
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chili powder
  • 3 cups cold water
  • 1/2 cup mint leaves
  • 1/2 cup coriander leaves
  • 2 green chilies
  • 1 tablespoon tamarind paste
  • 2 tablespoons jaggery (or sugar)

Steps:

  1. Mix semolina, salt, and warm water to knead a firm dough. Cover it and let it rest for 20 minutes.
  2. Roll out small portions of dough and form small circles. Deep fry these circles till they puff up and turn golden brown.
  3. Prepare the spicy pani by blending mint leaves, coriander leaves, green chilies, tamarind paste, jaggery, and spices with water.
  4. Mix boiled potatoes and chickpeas with chaat masala, cumin powder, red chili powder, and salt for the filling.
  5. Poke a small hole on top of each puri, fill it with the potato-chickpea mixture.
