Ingredients
- 2 medium carrots, diced
- 1 cup cauliflower florets
- 1/2 cup green peas
- 2 large onions, finely chopped
- 2 tomatoes, finely chopped
- 1 green bell pepper, finely chopped
- 3 cloves of garlic, minced
- 1 inch ginger, minced
- 2 tablespoons pav bhaji masala
Steps:
- Boil potatoes, carrots, cauliflower, and green peas until soft. Mash them together and set aside.
- In a large pan, heat vegan butter. Add onions, bell pepper, garlic, and ginger. Sauté until onions are translucent.
- Add tomatoes, tomato paste, pav bhaji masala, turmeric, red chili powder, and salt. Cook until oil separates.
- Add mashed vegetables to the pan. Mix well and cook for 10 minutes. Add water if the mixture is too thick.
- Stir in lemon juice and garnish with cilantro. Serve hot with buttered pav.
