    Recipe Description

Experience the authentic taste of Mumbai street food with our Classic Vegan Pav Bhaji. This delightful blend of mashed vegetables cooked with aromatic spices and served with buttered pav (bread rolls) is a treat for the senses. Our vegan version ensures everyone can enjoy this beloved comfort food without compromising on flavor. The process involves simmering a variety of vegetables until tender, then mashing them together with a special pav bhaji masala to create a rich, savory mixture. Served hot with a squeeze of fresh lemon and chopped onions, this dish is not just food; it’s a cultural experience. Dive into the heart of Indian cuisine with this simple yet irresistible recipe.

    Ingredients

    • 2 medium carrots, diced
    • 1 cup cauliflower florets
    • 1/2 cup green peas
    • 2 large onions, finely chopped
    • 2 tomatoes, finely chopped
    • 1 green bell pepper, finely chopped
    • 3 cloves of garlic, minced
    • 1 inch ginger, minced
    • 2 tablespoons pav bhaji masala

    Steps:

    1. Boil potatoes, carrots, cauliflower, and green peas until soft. Mash them together and set aside.
    2. In a large pan, heat vegan butter. Add onions, bell pepper, garlic, and ginger. Sauté until onions are translucent.
    3. Add tomatoes, tomato paste, pav bhaji masala, turmeric, red chili powder, and salt. Cook until oil separates.
    4. Add mashed vegetables to the pan. Mix well and cook for 10 minutes. Add water if the mixture is too thick.
    5. Stir in lemon juice and garnish with cilantro. Serve hot with buttered pav.
