Ingredients

  • 3 medium potatoes, peeled and diced
  • 2 medium carrots, diced
  • 1 cup cauliflower florets
  • 1/2 cup green peas
  • 2 large onions, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green bell pepper, finely chopped
  • 3 cloves of garlic, minced
  • 1 inch ginger, minced
  • 2 tablespoons pav bhaji masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder
  • Salt to taste
  • 2 tablespoons tomato paste
  • 3 tablespoons vegan butter

Steps:

  1. Boil potatoes, carrots, cauliflower, and green peas until soft. Mash them together and set aside.
  2. In a large pan, heat vegan butter. Add onions, bell pepper, garlic, and ginger. Sauté until onions are translucent.
  3. Add tomatoes, tomato paste, pav bhaji masala, turmeric, red chili powder, and salt. Cook until oil separates.
  4. Add mashed vegetables to the pan. Mix well and cook for 10 minutes. Add water if the mixture is too thick.
  5. Stir in lemon juice and garnish with cilantro. Serve hot with buttered pav.
