Ingredients
- 1 vegan pie crust
- 2 cups pecans, halved
- 1 cup brown sugar
- 1/2 cup maple syrup
- 1/4 cup cornstarch
- 1 cup water
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Steps:
- Preheat the oven to 350°F (175°C).
- Arrange the pecans in the bottom of the pie crust.
- In a saucepan over medium heat, mix brown sugar, maple syrup, cornstarch, and water. Stir well.
- Bring to a boil, then reduce heat and simmer until the mixture thickens.
- Remove from heat and stir in coconut oil, vanilla extract, and salt.
- Bake for 40 minutes or until the filling is set.
- Allow to cool before serving.
