Recipe Description

A comforting classic, this dish features flavorful vegan sausages served atop creamy mashed potatoes with a rich and savory onion gravy, perfect for a cozy night in.

Ingredients

  • 4 large potatoes, peeled and quartered
  • 8 vegan sausages
  • 2 large onions, thinly sliced
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 2 cups vegetable broth
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • Salt and pepper to taste
  • 1/4 cup plant-based milk
  • 2 tbsp vegan butter

Steps:

  1. Boil the potatoes in salted water until tender, about 20 minutes. Drain and return them to the pot.
  2. Add plant-based milk and vegan butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  3. While the potatoes are cooking, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the vegan sausages and cook according to package instructions until browned. Remove and set aside.
  4. In the same skillet, add the remaining vegetable oil and sliced onions. Sauté until soft and golden.
  5. Add soy sauce and vegetable broth to the onions. Bring to a simmer and slowly stir in the cornstarch mixture to thicken. Season with salt and pepper.
