    Ingredients

    • 1 large onion, diced
    • 2 carrots, peeled and diced
    • 2 stalks celery, diced
    • 3 cloves garlic, minced
    • 1 bay leaf
    • 1/2 teaspoon thyme
    • 6 cups vegetable broth
    • Salt and pepper to taste
    • 2 tablespoons olive oil

    Steps:

    1. Rinse the split peas under cold water.
    2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
    3. Add the rinsed split peas, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil.
    4. Reduce heat to low, cover, and simmer for 1 hour, or until the peas are soft.
    5. Remove the bay leaf. Use an immersion blender to purée the soup to your desired consistency. Season with salt and pepper to taste.
