Ingredients
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 bay leaf
- 1/2 teaspoon thyme
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Steps:
- Rinse the split peas under cold water.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
- Add the rinsed split peas, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour, or until the peas are soft.
- Remove the bay leaf. Use an immersion blender to purée the soup to your desired consistency. Season with salt and pepper to taste.
