Recipe Description

Embraced for its comforting warmth and wholesome ingredients, Classic Vegan Split Pea Soup is a testament to simplicity and healthful eating, marrying the principles of veganism with the timeless allure of homemade soup. This recipe, rooted in the tradition of hearty winter dishes, uses split peas as its foundation, supplemented by a mélange of aromatic vegetables and spices that gently simmer together, culminating in a rich, creamy texture without the use of any animal products. Its preparation is a journey of culinary alchemy, transforming humble ingredients into a nourishing meal that soothes the soul and satisfies the appetite. Ideal for any season, but particularly comforting during the cooler months, it’s a versatile dish that celebrates the beauty of plant-based cuisine.

Ingredients

  • 2 cups dried split peas
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Steps:

  1. Rinse the split peas under cold water.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Sauté until the vegetables are soft, about 5 minutes.
  3. Add the rinsed split peas, vegetable broth, bay leaf, and thyme to the pot. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1 hour, or until the peas are soft.
  5. Remove the bay leaf. Use an immersion blender to purée the soup to your desired consistency. Season with salt and pepper to taste.
