    Ingredients

    • 2 tablespoons vegetable oil
    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 onion, sliced
    • 2 cloves garlic, minced
    • 1 tablespoon soy sauce
    • 1 teaspoon ginger, grated
    • 1 tablespoon cornstarch
    • 1/2 cup vegetable broth

    Steps:

    1. Press and cube the tofu, then toss in cornstarch.
    2. Heat vegetable oil in a pan over medium-high heat. Add tofu and stir-fry until crispy. Remove tofu and set aside.
    3. In the same pan, add more oil if needed, and stir-fry the bell peppers, onion, and garlic.
    4. Mix vegetable broth, soy sauce, ginger, and sesame oil in a bowl. Pour over the vegetables. Add the tofu back into the pan.
    5. Cook everything together for a few more minutes. Season with salt and pepper.
