Recipe Description
Light, fluffy, and bursting with vanilla flavor, these vegan vanilla cupcakes are the perfect treat for any celebration.
Ingredients
- 1 cup granulated sugar
- 1/2 cup vegan butter, softened
- 1 cup almond milk
- 1 tablespoon apple cider vinegar
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Steps:
- Preheat oven to 350°F (175°C).
- In a small bowl, mix together almond milk and apple cider vinegar. Set aside for 5 minutes to curdle.
- In a large bowl, cream together vegan butter and sugar until light and fluffy.
- Add the curdled almond milk, vanilla extract, and mix well.
- Sift in the flour, baking powder, baking soda, and salt. Mix until just combined.
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before topping with your favorite vegan frosting.
