Whether you’re seeking a light lunch, a wholesome snack, or a unique addition to your dinner table, this Zaru Soba recipe promises to deliver on flavor and ease, embodying the essence of traditional Japanese cuisine in a vegan-friendly format.

    Ingredients

    • 2 cups dashi (vegan)
    • 3 tablespoons soy sauce
    • 3 tablespoons mirin
    • 1 tablespoon sugar
    • 1 green onion, thinly sliced
    • 1 sheet nori, cut into thin strips
    • Wasabi paste, to taste

    Steps:

    1. Cook soba noodles according to package instructions, then rinse under cold water and drain.
    2. In a saucepan, combine dashi, soy sauce, mirin, and sugar. Bring to a boil, then allow to cool completely.
    3. Serve noodles on a bamboo mat or plate. Place dipping sauce in a small bowl. Garnish with green onion, nori strips, and wasabi.
    4. To eat, dip noodles into the sauce, then enjoy.
